While visiting friends in Ann Arbor, I stumbled across a little french/japanese restaurant called Café Japon. I had a really great smoked salmon sandwich with goat cheese, arugula, onion, and capers on a french baguette. All such fresh and delicious ingredients!
You won’t find me admitting this often, but if you were to recreate this exact sandwich I would recommend not using a panini maker! However, what you could do is substitute the bread for sourdough or even wheat and then grill it on the panini! It would be different because the salmon would be hot and the cheese would be melty, but it would taste delicious!
